This peaceful hamlet is home to a traditional dish that has become a must-try for any visitor: Pho Trang Kim. Unlike the mass-produced noodles found in big cities, every bowl of Pho Trang Kim is a labor of love, crafted using techniques passed down through generations.

The secret lies in the noodles. They are entirely handmade, from the grinding of the local mountain rice to the steaming and cutting. The process is similar to making 'bánh cuốn' (steamed rice rolls). The rice batter is spread thinly over a cloth stretched over boiling water, steamed, and then hung on bamboo poles to 'air dry' naturally. This 'hong gió' (wind-drying) process gives the noodles a unique texture—soft yet resilient, with a distinct aroma of fresh rice. Once dried, they are hand-cut into thick, rustic strands.

The protein of choice is 'gà đồi' or hill chicken. These are local chickens raised naturally on the hillsides, feeding on corn and insects. Their meat is firm, sweet, and incredibly flavorful compared to industrial poultry. The broth is another masterpiece, simmered for hours from pork and chicken bones and infused with highland spices like ginger, turmeric, star anise, cinnamon, and cardamom. This combination creates a fragrant, golden liquid that warms the soul in the chilly mountain air. On busy mornings, a single shop can sell over 300 bowls, with customers often lining up to wait for the fresh noodles to be prepared. Eating a bowl of Pho Trang Kim amidst the morning mist of Quan Bạ is not just a meal; it's an immersion into the authentic culture and slow-paced life of Vietnam's northern frontier.
