Xoi Gac, or red sticky rice, is an indispensable dish in Vietnamese culinary tradition, especially during the Lunar New Year (Tet) and other major family celebrations. The vibrant red color of the dish, naturally derived from the baby jackfruit (gac), symbolizes good luck, prosperity, and happiness for the coming year. Beyond its auspicious meaning, Xoi Gac is beloved for its rich, subtly sweet flavor, fragrant aroma, and wonderfully chewy texture. Cooking this traditional dish to perfection requires a bit of patience and attention to detail, but the rewarding results are well worth the effort.

To prepare authentic Xoi Gac, the key lies in selecting high-quality glutinous rice and fresh, ripe gac fruit. The glutinous rice should be soaked in water for at least six to eight hours, or overnight, to ensure that the grains cook evenly and achieve the desired soft, sticky texture. The red flesh surrounding the seeds of the gac fruit is carefully scooped out and mixed with a splash of rice wine (ruou trang), which helps release the vivid red pigment and enhances the natural flavor. The soaked rice is then thoroughly mixed with the red gac mixture, coating every single grain in a beautiful, natural crimson hue.

The steaming process is where the magic happens. The rice is placed in a traditional steamer and cooked over medium-high heat for about thirty to forty minutes. Halfway through the cooking process, a small amount of sugar and a touch of coconut milk or cooking oil are gently folded into the rice to add a rich, creamy sweetness and a beautiful glossy finish. Once fully cooked, the Xoi Gac should be fluffy, fragrant, and perfectly sticky without being mushy. It is traditionally molded into beautiful shapes using decorative plastic molds and served alongside savory dishes like Vietnamese ham (gio lua) or boiled chicken, creating a perfect balance of flavors on the festive dining table.
