00Hanoi's culinary scene is famous worldwide for its rich traditions, but it is also a vibrant hub for exciting modern street food innovations. One of the most talked-about food trends capturing the curiosity of locals and international tourists alike is "kem cham muoi" (salt-dipped ice cream). This unique dessert offers a refreshing, sweet, and savory flavor profile that is perfect for adventurous food lovers visiting the capital.
Developed by 42-year-old entrepreneur To Tuan Anh, this innovative treat is a creative adaptation of Mexican paletas—traditional frozen fruit bars made with fresh, natural ingredients. Drawing on his ten years of experience in the tourism industry, Tuan Anh wanted to create a product that highlights the incredible quality of Vietnamese tropical fruits while introducing a unique international dessert concept to the local market.
Unlike mass-produced ice cream, Tuan Anh’s brand uses 100% natural fresh fruits sourced directly from Vietnam's most famous agricultural regions. The premium ingredients list includes:
- Fresh, sweet strawberries from the cool highlands of Moc Chau.
- Rich, creamy avocados and premium durians from Dak Lak and Gia Lai in the Central Highlands.
- Sweet Hoa Loc sand mangoes and fragrant guavas from the fertile Mekong Delta.
To preserve the natural flavor, vibrant colors, and smooth texture without using artificial preservatives or stabilizers, the fresh fruits are processed and flash-frozen at an ultra-low temperature of -35°C. This meticulous process prevents the formation of large ice crystals, resulting in a smooth, satisfying bite that captures the true essence of the fruit.
Currently offering 14 unique fruit flavors priced at an affordable 25,000 VND per bar, the absolute crowd favorite is the "kem coc" (ambarella ice cream) paired with "muoi o mai" (salted plum powder). Ambarella has a naturally tart, crisp flavor. When frozen into a refreshing ice pop and dipped into the savory, sweet, and slightly spicy plum salt, the combination creates an explosion of flavors that perfectly balances acidity and sweetness.
Initially launched in 2016 near the famous Trang Tien area, the business has since relocated to a cozy cafe setting on Bui Thien Ngo Street in Long Bien District. While the shop is located slightly outside the city center, they run a highly efficient delivery service serving Hanoi and other major cities like Ho Chi Minh City, Da Nang, and Hai Phong.
